As a gift to my friends and family for Valentines day..... I wanted to share a yummy muffin recipe....
I have had great success with soaking this recipe....but you can make it either way.
I adapted this recipe from the 2 sisters cookbook. I played around with the recipe for several reasons...it was a great recipe on it’s own...but I wanted to make it with coconut milk, less moist as it was a but too wet, soaked to help with the phytic acid, and faster. It calls to zest lemon and it tastes really great that way, but right now I don’t always have time to sit and zest large amounts of lemon....we found a really great tasty organic lemon juice at Costco. So, I played around with the recipe and really enjoy the results.....we made these for our school Valentines party......It is dairy free since we have two children allergic to dairy. You can switch around what works best for your family.
Lemon - Blueberry Dream Muffins
adapted from Two sisters cookbook
If you want to soak...start this the night before....
4 cups coconut milk tonic ( 1 can Thai coconut milk & 2 1/4 cups water)
8 cups freshly millled soft white wheat
4 Tablespoons lemon juice
Mix everything together and cover and sit over night.....
Next morning...
Add
1 cup olive oil ( the recipe calls for melted butter, or you could use melted coconut oil, but I wanted to save time and skip the extra step of melting and washing another dish, so we just use a good olive oil)
1 ½ cups of honey (it calls for 2 cups but I try to watch sugar here! :)
4 eggs
4 teaspoons vanilla
3 teaspoons salt
4 Tablespoons baking powder
3 cups blueberries
Mix all together & bake @ 350 about 20 min. Enjoy
