Easy potatoes

Our family just loves this potato recipe we came up with....it is super easy, healthy & yummy......

We sometimes have it with our Wednesday breakfast night or as a side dish with our main meals.

What you will need.....

Organic Yukon potatoes. (I think this type of potato is what makes the dish so good. Azure has the best potatoes we have ever had)
Several spoonfuls of coconut oil
Italian Garden seasoning from Homemade Dressings (we got ours at Azure)

I don’t have exact measurements....we just wing it each time....They have always turned out very good....
Wash and cut up potatoes into chunks. Place in glass casserole dish, put several spoonfuls of coconut oil on top, and then sprinkle seasoning on. Bake at 350 for 1 hour or so. It just depends how crispy you want them....I check them about 30 min into the cooking and turn them...

As a gift to my friends and family for Valentines day..... I wanted to share a yummy muffin recipe....
I have had great success with soaking this recipe....but you can make it either way.
I adapted this recipe from the 2 sisters cookbook. I played around with the recipe for several reasons...it was a great recipe on it’s own...but I wanted to make it with coconut milk, less moist as it was a but too wet, soaked to help with the phytic acid, and faster. It calls to zest lemon and it tastes really great that way, but right now I don’t always have time to sit and zest large amounts of lemon....we found a really great tasty organic lemon juice at Costco. So, I played around with the recipe and really enjoy the results.....we made these for our school Valentines party......It is dairy free since we have two children allergic to dairy. You can switch around what works best for your family.

Lemon - Blueberry Dream Muffins
adapted from Two sisters cookbook

If you want to soak...start this the night before....

4 cups coconut milk tonic ( 1 can Thai coconut milk & 2 1/4 cups water)
8 cups freshly millled soft white wheat
4 Tablespoons lemon juice
Mix everything together and cover and sit over night.....

Next morning...
Add
1 cup olive oil ( the recipe calls for melted butter, or you could use melted coconut oil, but I wanted to save time and skip the extra step of melting and washing another dish, so we just use a good olive oil)
1 ½ cups of honey (it calls for 2 cups but I try to watch sugar here! :)
4 eggs
4 teaspoons vanilla
3 teaspoons salt
4 Tablespoons baking powder
3 cups blueberries

Mix all together & bake @ 350 about 20 min. Enjoy

Beginning

We are starting this blog because I have a passion about sharing tid bits here and there with friends and family.....whether it be great books I have recently read, nutrition facts I learned, recipes or so on. With the season I am in keeping me busier and busier, having much less free time, wanting to be a good steward of my time and pour myself into raising my children....I have decided to start this little blog and will just post my tid bits here....often I will share something with a friend and I talk or write fast before someone here needs me....and then later I realize....oh I forgot to write that and so on.....Hopefully that will not happen if I just type it out for a blog post and I will also stop filling my friends e-mail bins with my tid bits.... :)
I pray this blog will bless others....Maybe the things I have learned or are learning will help ladies in the blog world too not just my friends and family, and we can learn along the way together. Being a wife and mother are my first commitments and I want to do a good job at it. I would not be a good Titus2 example to my daughters if I myself did not live out the role first. I am far from perfect and I humbly admit I fall short, but I try each day to be who the Lord would have me to be and to live for Him. I want to be a mom that is not just here, but involved with her children each day....doings things with them, teaching them about the Lord and his goodness and building life bonds. I feel so honored and blessed that the Lord blessed me with these little ones...I say all that to let it be known it may take a bit for me to post comments or answer questions. Please be patient.
If I can encourage other ladies along the way or with things I have learned than I would like to pass that along...

P.S. I am hoping to get a book list up of why I recommend the health books @ our amazon store. There are some things in each book that I totally disagree with, but overall the health info is very good. You just must overlook the “new age” “evolution” things. We believe in creation science here.
I want to do a post on it so people know we do not stand behind those other things.
